Wall panelling has moved from a period detail to a mainstream renovation choice, and a great deal of it is being installed in houses where it does not belong, at heights that do not relate to anything, in profiles borrowed from a different architectural tradition entirely.
Done thoughtfully it transforms a room. Done carelessly it reads as applied decoration, and the difference is mostly proportion.
The common types and what they suggest
Raised panel wainscoting has a central panel projecting within a frame, and it is the most formal of the traditional treatments. It suits dining rooms, entries, and rooms with substantial architectural presence.
Flat or recessed panel work has a simpler central panel and reads as quieter and more versatile.

Full-height panelling treats the entire wall rather than the lower portion, and it is the most committing version of any of these.
Height is the decision that matters most
Panelling stopped at an arbitrary height is what makes a room look wrong, and it is the most frequent error.
Traditional wainscoting heights relate to the room and to the furniture within it. Chair rail height originated functionally, protecting plaster from chair backs, and sits roughly a third of the way up a wall.
A taller treatment, occupying around two thirds of the wall height, is a distinctly different proposition and reads as more formal and more architectural.
